Caramel Popcorn Recipe

Ingredients

Popped Popcorn

Light Brown Sugar

Karo Light Corn Syrup

Unsalted Butter

Salt

Baking soda

Vanilla Extract

Directions

Spray, large shallow roasting pan heavily with cooking spray. Add popcorn and begin preparing the caramel.

In a heavy bottom 2-qt saucepan add brown sugar, corn syrup, butter and salt. Stir until all ingredients are melted and bring to boil.

Allow to boil rapidly for 5 min without stirring. Remove saucepan from heat and add the baking soda and vailla. Caramel will begin to rapidly bubble and change color slightly.

Pour the caramel syrup over the warm popcorn and coat evenly with sauce.

Bake for 40 min in a 250 degree oven stirring approxiately every 10 min or so to prevent excess sauce from settling to the bottom and clumping.

Remove from oven and spread evening on a sheet pan covered with foil and sprayed to allow to cool evenly. Break up large clumps and place into your popcorn bowls.


Pro tip:

Add mini pretzels and or your favorite nuts to give your popcorn extra crunch and flavor. You can also add your favorite spice mix like cajun and then pour your caramel sauce over it all to bake.
